Restaurant Marly’s has opened its doors in the former premises of Chez Fleur on the Fred—ushering in a new chapter at a well-known location. The concept offers classic French cuisine with a contemporary twist, created by the original founders of Café de Florèz, which continues to thrive in the heart of The Hague.

 

Around five years after selling their cherished Café de Florèz, Gilliam and Luz felt the familiar pull of entrepreneurship once more. It is, after all, in their nature. This renewed drive led to the creation of Marly’s.

Marly, one of their three dogs, is a Spanish rescue they welcomed into their lives a decade ago. Her presence can be found throughout the restaurant, subtly woven into the logo and various design details. Inspired by their affection for Paris, Gilliam and Luz have crafted a warm, playful, and inviting ambiance in which every guest feels immediately at home.

The menu embraces French tradition: honest, classic, and free of unnecessary frills. No shared dining, no fusion—simply a refined selection of starters, mains, and desserts. Pure, flavourful, and unmistakably Marly’s.
